Ingredients
  

  • 4 cups chicken or vegetable broth
  • 1 stalk lemongrass cut into 2-inch pieces, smashed
  • 4 –5 kaffir lime leaves torn
  • 3 –4 Thai bird’s eye chilies smashed
  • 200 grams fresh shrimp peeled and deveined
  • 200 grams mushrooms sliced
  • 2 –3 tablespoons fish sauce
  • 1 –2 tablespoons lime juice
  • Coriander leaves for garnish

Method
 

  1. Prepare the broth by bringing it to a simmer in a pot.
  2. Add the lemongrass, kaffir lime leaves, and chilies to the broth.
  3. Let the broth simmer with aromatics for about 10 minutes.
  4. Add the mushrooms and shrimp to the pot.
  5. Season the soup with fish sauce and lime juice.
  6. Remove the pot from heat and garnish with fresh coriander leaves.
  7. Serve hot and enjoy your homemade Tom Yum Soup.
