Savoring Buffalo Cauliflower Nachos for Game Day

Buffalo Cauliflower Nachos made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients
  

  • 1 large head of cauliflower
  • 1 cup Buffalo sauce
  • 4 cups tortilla chips
  • 1 cup shredded cheddar cheese
  • 1/2 cup blue cheese or ranch dressing
  • 1/4 cup chopped green onions
  • 1/4 cup fresh cilantro optional
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. Prepare the cauliflower by cutting it into bite-sized florets.
  3. Toss the cauliflower florets with olive oil, salt, and pepper.
  4. Spread the florets on a baking sheet and roast for 20-25 minutes.
  5. In the last 5 minutes of roasting, toss the cauliflower with the Buffalo sauce.
  6. On a large serving platter, layer the tortilla chips at the base.
  7. Evenly distribute the roasted cauliflower over the chips.
  8. Sprinkle shredded cheddar cheese over the top, then return to the oven for about 5 minutes.
  9. Remove from the oven and drizzle with blue cheese or ranch dressing.
  10. Garnish with chopped green onions and cilantro if desired.
  11. Serve immediately while hot and enjoy!
