Ingredients
  

  • 2 cups cooked black beans
  • 1 cup cooked quinoa
  • 1 ripe avocado
  • 1/2 cup breadcrumbs
  • 1/4 cup fresh parsley chopped
  • 1/4 cup fresh cilantro chopped
  • 1/4 cup Green Goddess dressing
  • 1 teaspoon cumin
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, mash the black beans with a fork until slightly chunky.
  3. Add cooked quinoa, avocado, breadcrumbs, parsley, cilantro, Green Goddess dressing, cumin, salt, and pepper to the beans.
  4. Mix everything until just combined but do not overmix.
  5. Form patties from the mixture, about 1/2 inch thick.
  6. Place the patties on a lined baking sheet and bake for 20 minutes, flipping halfway through.
  7. While the burgers are baking, prepare any desired toppings or sides.
  8. Once baked, let burgers cool for a few minutes before serving.
