Peruvian Chicken with Green Sauce made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients
  

  • 4 chicken thighs skin-on and bone-in
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 bunch of fresh cilantro
  • 2 jalapeños seeds removed for less heat
  • 1/2 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 garlic clove
  • 1/4 teaspoon sugar

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. Season the chicken thighs with salt, pepper, and cumin.
  3. Heat olive oil in an oven-safe skillet over medium heat.
  4. Sear the chicken thighs for about 5-7 minutes until golden brown, then flip.
  5. Transfer the skillet to the oven and roast for 25-30 minutes, or until cooked through.
  6. While the chicken is roasting, prepare the green sauce.
  7. In a blender, combine cilantro, jalapeños, mayonnaise, lime juice, garlic, sugar, and a pinch of salt.
  8. Blend until smooth and check for seasoning.
  9. Once the chicken is done, let it rest for 5-10 minutes before serving.
  10. Serve the chicken topped with the green sauce, along with your favorite sides.
