Savoring Summer with Delicious Zucchini Pie

Zucchini Pie made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients
  

  • 2 medium zucchinis grated
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 3 large eggs
  • 1 cup grated cheese cheddar or mozzarella
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 pie crust store-bought or homemade

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Prepare your pie crust by fitting it into a 9-inch pie dish and pre-baking it for about 10 minutes.
  3. In a skillet, heat a little oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
  4. Add minced garlic to the skillet and cook for an additional 1-2 minutes until fragrant. Remove from heat.
  5. In a large bowl, combine grated zucchini, sautéed onion and garlic, eggs, milk, cheese, salt, and pepper.
  6. Pour the filling into the prepared pie crust, smoothing the top with a spatula.
  7. Bake the pie in the preheated oven for about 40-45 minutes, until the top is golden brown and the filling is set.
  8. Let the pie cool for at least 10 minutes before slicing and serving.
