Ingredients
  

  • 2 cups cooked chicken chopped
  • 1 cup carrots diced
  • 1 cup celery diced
  • 1 cup potatoes cubed
  • 1 onion chopped
  • 4 cups chicken broth
  • 2 cups homemade or store-bought pie crust
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a large pot, sauté the onion, carrots, and celery until the onion is translucent.
  3. Add the cooked chicken, potatoes, chicken broth, thyme, salt, and pepper to the pot.
  4. Bring the mixture to a gentle simmer, stirring occasionally for about 10-15 minutes.
  5. Transfer the filling into a pie dish and cover it with the pie crust, sealing the edges.
  6. Bake in the preheated oven for 30-35 minutes, until the crust is golden brown.
