Method
- Preheat the oven to 400°F (200°C).
- Pat the chicken thighs dry with paper towels.
- In a bowl, mix olive oil, smoked paprika, garlic powder, salt, and black pepper.
- Rub the mixture all over the chicken thighs.
- Place the chicken thighs skin-side up in a baking dish.
- Pour the vegetable broth into the baking dish.
- Add lemon slices on top of the chicken.
- Bake for 35-40 minutes, or until the chicken is cooked through.
- Let the chicken rest for 5-10 minutes before serving.
