Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 cup fresh asparagus trimmed and cut into 1-inch pieces
  • 1 cup cream cheese softened
  • 1/2 cup shredded mozzarella cheese
  • 2 cloves garlic minced
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the stuffing by mixing the asparagus, cream cheese, mozzarella, garlic, lemon juice, salt, and pepper in a bowl.
  3. Cut slits in each chicken breast to create pockets for the stuffing.
  4. Stuff each chicken breast with the asparagus mixture, pressing it in well.
  5. Heat the olive oil in a skillet over medium-high heat and sear the stuffed chicken breasts for about 3-4 minutes on each side.
  6. Transfer the seared chicken breasts to a baking dish and bake for 20-25 minutes or until the internal temperature reaches 165°F (74°C).
  7. Let the chicken rest for a few minutes before slicing to serve.
