Preheat your oven to 400°F (200°C) if baking. Lightly grease a baking sheet with cooking spray or oil.
Take a tortilla and spoon approximately 2-3 tablespoons of the chicken mixture onto the bottom third of the tortilla. Roll tightly, folding in the sides as you go to encase the filling.
Place each rolled taquito seam-side down on the prepared baking sheet (or frying pan if frying) and brush lightly with oil for extra crispiness.
Bake in the preheated oven for about 20-25 minutes or until golden and crispy, turning once halfway through. If frying, cook for about 3-4 minutes on each side until golden brown.
Remove from the oven or frying pan and let cool slightly before serving. Pair with ranch or blue cheese dressing for dipping.
