Preheat your oven to 375°F (190°C).
In a skillet, heat the olive oil over medium heat.
Add the diced onions and minced garlic to the skillet.
Combine the cooked quinoa, breadcrumbs, buffalo sauce, sautéed onions and garlic, paprika, cheese, salt, and pepper in a large bowl.
Form the mixture into small balls, about 1.5 inches in diameter.
Place the quinoa balls on a baking sheet lined with parchment paper.
Bake for 20-25 minutes or until golden brown.
Remove from the oven and let them cool slightly before serving.
