Unroll the crescent roll dough on a clean surface.
Cut each triangle into smaller pieces, if desired, for smaller bites.
Place a mini sausage on the wider end of each triangle, then roll it up.
Place the rolled sausages on the prepared baking sheet.
Brush the tops with beaten egg and sprinkle seasonings, if desired.
Bake for 12-15 minutes or until golden brown.
Remove from the oven and let them cool slightly before serving.
