Ingredients
  

  • 4 bone-in pork chops about 1 inch thick
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 onion sliced
  • 2 cloves garlic minced
  • 4 carrots peeled and chopped
  • 2 potatoes diced
  • 1 cup chicken broth
  • 2 sprigs fresh thyme
  • 1 bay leaf

Method
 

  1. Preheat the Dutch oven over medium-high heat.
  2. Season the pork chops with salt, pepper, and smoked paprika.
  3. Add olive oil to the pot, then sear the pork chops for 3-5 minutes on each side until golden brown.
  4. Remove the pork chops and set aside, keeping them warm.
  5. In the same pot, add sliced onions and garlic; sauté until softened.
  6. Add diced potatoes and chopped carrots; stir to combine.
  7. Pour in chicken broth, then add thyme and bay leaf.
  8. Return the pork chops to the pot, ensuring they're nestled in the liquid.
  9. Cover the Dutch oven and reduce the heat to low; let it simmer for 35-40 minutes.
  10. Remove the bay leaf and thyme sprigs before serving.
  11. Serve the pork chops with the vegetables and sauce from the pot.
