Savory French Onion Chicken Noodle Casserole

Ingredients
  

  • 1 lb boneless skinless chicken breasts
  • 2 large onions thinly sliced
  • 3 cups egg noodles
  • 4 cups beef or chicken broth
  • 2 cups shredded Gruyère cheese
  • 1 tablespoon olive oil
  • 2 teaspoons fresh thyme leaves
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add the sliced onions and a pinch of salt, cooking until caramelized, about 25-30 minutes.
  3. While onions are caramelizing, cook the egg noodles according to package instructions until al dente. Drain and set aside.
  4. Once the onions are caramelized, add the chicken breasts to the skillet, followed by the broth and thyme. Bring the mixture to a simmer and cook for 10-15 minutes until chicken is cooked through.
  5. Remove the chicken from the skillet, shred it with two forks, and return it to the skillet. Stir in the cooked noodles and half of the Gruyère cheese, mixing thoroughly.
  6. Transfer the mixture to a greased 9x13 inch baking dish. Sprinkle the remaining Gruyère cheese evenly on top.
  7. Bake in the preheated oven for 25-30 minutes or until the cheese is melted and bubbly.
  8. Let the casserole cool for a few minutes before serving.
