Savory Goat Cheese Stuffed Artichokes Recipe

Ingredients
  

  • 4 medium-sized artichokes
  • 8 oz goat cheese
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic minced
  • 2 tbsp fresh parsley chopped
  • 1 lemon juiced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Method
 

  1. Prepare the artichokes by trimming and cleaning them.
  2. Boil the artichokes for about 30 minutes.
  3. Make the goat cheese filling by mixing the ingredients.
  4. Stuff the artichokes with the filling.
  5. Drizzle olive oil on top and season.
  6. Bake the stuffed artichokes for about 25-30 minutes.
  7. Serve warm, garnished with additional parsley.
