Unroll the crescent roll dough into a flat sheet.
Spread a thin layer of Dijon mustard over the dough.
Place a slice of ham over each triangle of dough.
Sprinkle shredded cheddar cheese on top of the ham.
Starting from the wide end, roll up each triangle tightly.
Place the rolled ups on a baking sheet lined with parchment paper.
Brush the tops with beaten egg for a golden finish.
Bake in the preheated oven for 12-15 minutes, or until golden brown.
