Ingredients
  

  • 4 boneless skinless chicken breasts (1.5 lbs)
  • 1 cup carrots sliced
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 3 cloves garlic minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish optional

Method
 

  1. Prepare the marinade by combining honey, soy sauce, and garlic.
  2. Marinate the chicken breasts in the mixture for at least 30 minutes.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Add the marinated chicken breasts to the skillet, reserving the marinade.
  5. Cook the chicken for about 5-7 minutes on each side until browned and cooked through.
  6. Remove the chicken and let it rest while you prepare the sauce.
  7. In the same skillet, add the reserved marinade and bring to a boil.
  8. Slice the rested chicken and add it back to the skillet, along with the carrots.
  9. Cook for an additional 5 minutes until the carrots are tender yet crisp.
  10. Serve hot, garnished with fresh parsley if desired.
