Ingredients
  

  • 2 6-ounce salmon fillets
  • 1/2 cup pecans finely chopped
  • 1/4 cup maple syrup
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil for cooking

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. Prepare a baking sheet by lining it with parchment paper.
  3. In a bowl, mix the chopped pecans, maple syrup, Dijon mustard, garlic powder, salt, and black pepper.
  4. Place the salmon fillets, skin-side down, on the prepared baking sheet.
  5. Spread the pecan mixture evenly over the tops of the salmon fillets.
  6. Drizzle a small amount of olive oil over the crust for added richness.
  7. Bake in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork.
  8. Remove from the oven and let it rest for a couple of minutes before serving.
