Add your mixed vegetables and cheese to the egg mixture, stirring gently to combine.
Pour the egg mixture into each crust until just full.
Bake for 20-25 minutes, or until the filling is set and the tops are golden.
Allow quiches to cool for a few minutes before removing from the pan.
Serve warm, garnished with fresh herbs if desired.
