Ingredients
  

  • 1 cup all-purpose flour
  • 1/4 cup unsalted butter chilled and cubed
  • 1/4 cup cold water
  • 4 large eggs
  • 1 cup heavy cream
  • 1 cup mixed vegetables e.g., bell peppers, spinach, mushrooms
  • 1 cup shredded cheese e.g., cheddar, Swiss, or feta
  • Salt and pepper to taste

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine flour and butter until crumbly.
  3. Add cold water gradually to the flour mixture, mixing until it forms a dough.
  4. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  5. Roll out the chilled dough on a floured surface and cut into circles.
  6. Press the dough circles into a greased muffin tin, forming a crust in each cup.
  7. In a separate bowl, whisk together eggs, cream, salt, and pepper.
  8. Add your mixed vegetables and cheese to the egg mixture, stirring gently to combine.
  9. Pour the egg mixture into each crust until just full.
  10. Bake for 20-25 minutes, or until the filling is set and the tops are golden.
  11. Allow quiches to cool for a few minutes before removing from the pan.
  12. Serve warm, garnished with fresh herbs if desired.
