Ingredients
  

  • 1 pound of Italian sausage
  • 1 red bell pepper diced
  • 1 zucchini sliced
  • 1 cup of cherry tomatoes halved
  • 1 onion chopped
  • 2 cloves of garlic minced
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chopped onion and minced garlic, sauté until softened.
  3. Add the sausage, breaking it apart with a spatula.
  4. Incorporate the bell pepper and zucchini, cooking for 3-5 minutes.
  5. Stir in the cherry tomatoes, continuing to cook for another 3-4 minutes.
  6. Season with salt and pepper to taste.
  7. Remove from heat and serve hot.
