Ingredients
  

  • 2 medium eggplants
  • 3 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons balsamic vinegar
  • Fresh basil for garnish

Method
 

  1. Prepare the eggplant by slicing it into cubes.
  2. Sprinkle salt on the eggplant cubes and let them sit.
  3. Heat olive oil in a large skillet over medium heat.
  4. Add the eggplant cubes to the skillet in a single layer.
  5. Sauté until the eggplant is golden and tender.
  6. Add minced garlic and black pepper.
  7. Drizzle balsamic vinegar over the eggplant.
  8. Remove from heat and garnish with fresh basil.
