Preheat your oven to 400°F (200°C).
Prepare the filling by sautéing garlic in a pan until fragrant.
Add the chopped spinach to the pan and cook until wilted.
In a bowl, combine the cooked spinach and garlic with feta, Parmesan, oregano, salt, and pepper.
Roll out the thawed puff pastry on a lightly floured surface.
Cut the pastry into strips, then fill each strip with the spinach and feta mixture.
Twist each filled strip and place them on a parchment-lined baking sheet.
Brush the tops of the twists with the beaten egg.
Bake for 15-20 minutes or until golden brown.
Allow to cool slightly before serving.
