Preheat your oven to 300°F (150°C).
In a bowl, combine the stout, honey, garlic, Dijon mustard, Worcestershire sauce, thyme, salt, and pepper.
Heat olive oil in a large oven-safe skillet over medium-high heat.
Sear the beef roast on all sides for 3-4 minutes until browned.
Pour the marinade over the seared roast in the skillet.
Cover the skillet with a lid or tightly with aluminum foil.
Place the skillet in the oven and cook for 3-4 hours.
Remove the skillet from the oven and let the roast rest for 15-20 minutes before slicing.
Slice the roast and serve with the pan juices.
