Ingredients
  

  • 3-4 pounds beef chuck roast
  • 1 cup stout beer
  • 1/2 cup honey
  • 4 cloves garlic minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Method
 

  1. Preheat your oven to 300°F (150°C).
  2. In a bowl, combine the stout, honey, garlic, Dijon mustard, Worcestershire sauce, thyme, salt, and pepper.
  3. Heat olive oil in a large oven-safe skillet over medium-high heat.
  4. Sear the beef roast on all sides for 3-4 minutes until browned.
  5. Pour the marinade over the seared roast in the skillet.
  6. Cover the skillet with a lid or tightly with aluminum foil.
  7. Place the skillet in the oven and cook for 3-4 hours.
  8. Remove the skillet from the oven and let the roast rest for 15-20 minutes before slicing.
  9. Slice the roast and serve with the pan juices.
