Savory Turkey Sausage-Stuffed Acorn Squash Delight

Turkey Sausage-Stuffed Acorn Squash made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients
  

  • 2 medium acorn squash
  • 1 pound ground turkey sausage
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 cup cooked quinoa
  • 1 teaspoon dried Italian herbs
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste
  • Olive oil for drizzling

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Halve the acorn squash and scoop out the seeds.
  3. Drizzle the insides with olive oil and season with salt and pepper.
  4. Place the squash halves cut side down on a baking sheet and roast for 25-30 minutes.
  5. In a skillet, heat a drizzle of olive oil and sauté the diced onion until translucent, about 5 minutes.
  6. Add the minced garlic and cook for another minute, stirring frequently.
  7. Add the ground turkey sausage to the skillet, breaking it apart with a spatula, and cook until browned.
  8. Stir in the cooked quinoa, Italian herbs, and half of the Parmesan cheese, mixing until combined.
  9. Remove the roasted squash from the oven and fill each half with the turkey sausage mixture, pressing down gently.
  10. Sprinkle the remaining Parmesan cheese on top of the stuffed squash.
  11. Return the stuffed squash to the oven and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
  12. Let cool slightly before serving; serve warm and enjoy!
