Ingredients
  

  • 1 lb ground turkey
  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 bell pepper diced
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz diced tomatoes, with juice
  • 1 tablespoon taco seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese cheddar or Mexican blend
  • Fresh cilantro for garnish

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion and bell pepper, cooking until softened.
  3. Stir in minced garlic, cooking for an additional minute.
  4. Add ground turkey to the skillet, breaking it up as it cooks.
  5. Sprinkle taco seasoning over the cooked turkey, stirring to combine.
  6. Pour in the diced tomatoes and black beans, mixing everything well.
  7. Let the mixture simmer for 5-7 minutes, allowing flavors to meld.
  8. Stir in shredded cheese until melted and well combined.
  9. Season with salt and pepper to taste before serving.
  10. Garnish with fresh cilantro and serve warm.
