Preheat your griddle or large cast iron skillet.
Divide the ground beef into 4 equal portions and gently form balls.
Place beef balls on the hot skillet and smash down with a spatula.
Season with salt and pepper immediately after smashing.
Cook for about 3-4 minutes until browned before flipping.
Flip the burgers and immediately place cheese on top.
While the burgers are cooking, warm the tortillas on a separate pan or directly over the open flame.
Assemble the tacos with smashed burgers and desired toppings.
Serve immediately while hot and enjoy!
