- Preheat your oven to 400°F (200°C).
- In a mixing bowl, combine cherries, soy sauce, honey, rice vinegar, garlic, and ginger.
- Season the chicken thighs with salt and pepper.
- Place the chicken thighs skin-side up in a baking dish and pour the cherry mixture over them.
- Bake in the preheated oven for 30-35 minutes, or until the chicken is cooked through.
- Occasionally baste the chicken with the glaze during baking.
- Remove the chicken from the oven and let it rest for 5 minutes before serving.
