Tender Air Fryer Pot Roast for Home Cooks

Air Fryer Pot Roast made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients
  

  • 3-4 lbs chuck roast
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 large onion quartered
  • 4 cloves garlic minced
  • 4 carrots cut into chunks
  • 3 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme

Method
 

  1. Preheat your air fryer to 400°F (200°C).
  2. Pat the chuck roast dry with paper towels and season generously with salt and black pepper.
  3. Rub the roast with olive oil on all sides.
  4. Place the seasoned roast in the air fryer basket and cook for 25 minutes.
  5. After 25 minutes, flip the roast to the other side and continue cooking for another 25 minutes.
  6. While the roast cooks, prepare the vegetables. In a bowl, mix the carrots, onions, and garlic with a little olive oil, salt, and pepper.
  7. Once the roast has cooked for 50 minutes, carefully remove it from the air fryer and place it on a cutting board.
  8. Add the vegetables to the air fryer basket along with half of the beef broth and Worcestershire sauce.
  9. Return the roast to the air fryer on top of the vegetables and pour the remaining broth around it, then add the rosemary and thyme.
  10. Air fry for an additional 30-40 minutes at 320°F (160°C), or until the roast reaches an internal temperature of 145°F (63°C).
  11. Once done, let the roast rest for 15 minutes before slicing.
