Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 cup all-purpose flour
  • Salt and pepper to taste
  • 1/4 cup olive oil
  • 1/2 cup white wine
  • 1/2 cup chicken broth
  • 1/4 cup freshly squeezed lemon juice
  • 2 tablespoons capers rinsed
  • 2 tablespoons fresh parsley chopped

Method
 

  1. Prepare the chicken breasts by pounding them to an even thickness.
  2. Season the chicken with salt and pepper, then coat with flour.
  3. Heat olive oil in a skillet over medium heat, then cook the chicken.
  4. Remove the chicken and set aside; prepare the sauce in the same skillet.
  5. Add chicken broth, lemon juice, and capers to the pan.
  6. Return the chicken to the pan, simmer briefly to meld flavors.
  7. Finish with chopped parsley before serving.
