Vibrant Grilled Chicken and Corn Salad Recipe

Ingredients
  

  • 2 boneless skinless chicken breasts
  • 2 ears of corn husked
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes halved
  • 1/4 cup red onion thinly sliced
  • 1/4 cup crumbled feta or cotija cheese
  • 1 tablespoon lime juice
  • 1 tablespoon honey
  • 1 teaspoon chili powder
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Method
 

  1. Preheat the grill to medium-high.
  2. Prepare the chicken and corn for grilling.
  3. Grill the chicken for 6-7 minutes per side.
  4. Grill the corn for about 10-12 minutes, turning occasionally.
  5. In a large mixing bowl, combine greens, tomatoes, onions, and cheese.
  6. Slice the grilled chicken and add it to the bowl.
  7. Cut the grilled corn off the cob and mix in.
  8. Whisk together lime juice, honey, salt, and pepper in a small bowl.
  9. Pour the dressing over the salad and toss gently.
  10. Serve immediately.
