Ingredients
  

  • 1 bell pepper any color
  • 1 zucchini
  • 1 red onion
  • 8 cherry tomatoes
  • 1 cup mushrooms whole or halved
  • Olive oil for drizzling
  • Salt and pepper to taste
  • 1 teaspoon dried Italian herbs

Method
 

  1. Preheat the grill to medium-high heat.
  2. Prepare the vegetables: wash, cut, and dry them.
  3. In a mixing bowl, combine the vegetables with olive oil, salt, pepper, and Italian herbs.
  4. Thread the prepared vegetables onto skewers, alternating colors and varieties.
  5. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally.
  6. Remove the skewers from the grill and let them cool for a couple of minutes before serving.
  7. Serve warm or at room temperature, garnished with fresh herbs if desired.
