Preheat the grill to medium-high heat.
Prepare the vegetables: wash, cut, and dry them.

Thread the prepared vegetables onto skewers, alternating colors and varieties.
Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally.
Remove the skewers from the grill and let them cool for a couple of minutes before serving.
Serve warm or at room temperature, garnished with fresh herbs if desired.
