Ingredients
  

  • 2 lbs beef chuck cut into 1-inch cubes
  • 4 cups beef broth
  • 3 large carrots sliced
  • 4 medium potatoes diced
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 cup frozen peas
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Method
 

  1. Prepare the ingredients by chopping the vegetables and cutting the beef into cubes.
  2. Season the beef cubes with salt and pepper.
  3. In a large skillet, sear the beef over medium-high heat until browned.
  4. Transfer the seared beef to the slow cooker, followed by the diced onions and garlic.
  5. Add the carrots, potatoes, frozen peas, bay leaf, thyme, tomato paste, and beef broth.
  6. Cover and cook on low for 7-8 hours or high for 4-5 hours.
  7. Check the seasoning and adjust with salt or pepper before serving.
  8. Serve hot, with crusty bread or over rice if desired.
