Ingredients
  

  • 2 cups fresh spinach chopped
  • 1 cup egg whites about 8 large egg whites
  • 1/2 cup shredded low-fat cheese
  • 1/2 cup diced bell pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. Prepare a muffin tin by greasing it lightly or using muffin liners.
  3. In a large mixing bowl, combine the egg whites, garlic powder, onion powder, salt, and pepper.
  4. Gently stir in the chopped spinach, diced bell pepper, and shredded cheese until evenly distributed.
  5. Pour the mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
  6. Bake in the preheated oven for 15-20 minutes, or until the tops are lightly golden and a toothpick inserted comes out clean.
  7. Let the muffins cool in the tin for about 5 minutes before transferring to a wire rack.
  8. Serve warm or at room temperature, and enjoy!
