Ingredients
  

  • 2 fillets of salmon 6 oz each
  • 2 tablespoons olive oil
  • 1 lemon zested and juiced
  • 1 orange zested and juiced
  • Salt and pepper to taste
  • 4 cups arugula
  • 1 cucumber thinly sliced
  • 1 tablespoon honey
  • Fresh herbs such as dill or parsley for garnish

Method
 

  1. Preheat the oven to 400°F (205°C).
  2. Prepare the citrus marinade by mixing olive oil, lemon juice, orange juice, zest from both fruits, salt, and pepper in a bowl.
  3. Place the salmon fillets in a baking dish and pour the marinade over them, ensuring they are well-coated.
  4. Bake the salmon in the preheated oven for 12-15 minutes, or until it flakes easily with a fork.
  5. Meanwhile, prepare the arugula cucumber salad by combining arugula, sliced cucumber, honey, and a touch of lemon juice in a bowl.
  6. Once the salmon is cooked, serve it over the arugula cucumber salad, garnished with fresh herbs.
